Qual’è la tecnica delle piastre cottura ad induzione? Il calore viene generato da un campo elettromagnetico. Quando si posa un recipiente metallico ferroso sopra alla piastra, un induttore elettrico che è presente sotto alla piastra genera un campo magnetico. Questo campo crea all’interno della pentola delle correnti chiamate di “Focault” dal nome dell’inventore. Queste correnti trasformano l’energia magnetica in calore, provocando il riscaldamento della pentola che così scalda le pietanze al suo interno. Il campo magnetico, e di conseguenza il calore, si sprigiona solo a contatto con la pentola e solo all’interno del suo diametro.
- Sicurezza: non ci sono fiamme, il calore infatti è sprigionato dal campo magnetico e solo all’interno del diametro della pentola entro cui si vuole cucinare. Non si rischia quindi di scottarsi toccando la piastra vicino al bordo.
- Pulizia: non essendo calda la piastra non si formano incrostazioni dovute all’accidentale fuoriuscita di liquidi.
- Design: per chi ama lo stile moderno e minimalista, le cucine ad induzione sono bellissime, lineari e lisce.
- Velocità nel riscaldare i cibi: ad esempio per una normale pasta, il tempo per portare ad ebollizione l’acqua praticamente si dimezza (dipende ovviamente dalla potenza usata).
- Assenza del pericolo di fughe di gas,
- Controllo molto preciso della variazione di temperatura della pentola (tramite display digitali): si può bloccare l’ebollizione, mantenere un fuoco molto basso o molto alto, con una precisione elevata che non si può ottenere con il tradizionale fornello a gas.
- Costo di utilizzo non superiore a quello a gas: l’energia elettrica costa di più, ma la cucina ad induzione entra in funzione solo quando serve, i tempi di utilizzo sono inferiori e il rendimento è del 90%.
- Pentole speciali richieste che devono essere costruite con acciai ad alto contenuto ferroso, non possono essere usate quelle in alluminio, vetro, terracotta, o ceramica, e in genere più costose (anche se ne ho trovate per esempio all’Ikea di piuttosto economiche).
- Modo diverso di cucinare: chi è abituato ai classici fornelli a gas, deve rivoluzionare le abitudini e i tempi di cottura.
- Produce campi elettromagnetici di media frequenza, che comunque non dovrebbero essere nocivi. Per questi motivi, e per qualche altro, ho scelto la piastra cottura Klarstein VariCook Single, bella da vedere nella sua veste in acciaio inox e vetroceramica, display a LED e manopola di regolazione. Progettata per pentole con diametro tra i 12 ed i 26 cm, potenza totale pari a 1800W regolabile su 10 livelli o in alternativa temperature da regolare tra 60° e 240°C. Provata per la cottura della pasta, l’acqua bolle veramente in circa metà del tempo impiegato sul gas, la temperatura dispersa è insignificante e si può programmare anche lo spegnimento della piastra, evitando di trovare la pasta stracotta. Utile per single o per lo show cooking unisce la praticità alla bellezza estetica. Un altro uso per cui utilizzare Klastein VariCook è la necessità di mantenere inalterata la temperatura di cottura del cibo.
What is the technique of induction cooking plates? Heat is generated by an electromagnetic field.
