The question is: how exactly does the brewing process work, where do the recipes come from and what are the tricks for home brewing?

The superpower of the "hops heroes"

Hopfenhelden is an online magazine revolving around beer - from its origins to modern times, from brewing beer like in the Middle Ages to the question of how to brew modern craft beer yourself. The hops heroes travel virtually through time and the world to spotlight anyone and everyone who can brew, wants to sell and, above all, wants to have a drink.​ In the magazine, you'll find a warehouse full of beer knowledge as well as tips on hobby brewing, interesting interviews and great recommendations on craft beer varieties from all over the world. Brew your own craft beer: Our own Pale Ale ​​

After the Hopfenhelden tested our Mundschenk beer brewing system and the Maischfest mash kettle for hops and malt some time ago, we also wanted to share their abundant brewing knowledge with our Klarstein family. The outcome: an exciting brewing workshop with ten lucky winners from Berlin and our first home-brewed craft beer.​ We would like to thank Clarissa Omiecienski and Nina Anika Klotz for the heroic workshop!

Our recipe for happiness ​

MALT:

  • ​2.4 kg Pale Ale
  • 1,7 kg Munich malt
  • 1.7 kg Pilsner malt​

​HOPS:

  • 71 g Cascade (5 % Alpha)
  • 6 g Admiral (15 % Alpha)

YEAST:

  • ​Safale S-04

What do I need to brew beer? First and foremost, a suitable recipe, because not every brewing process is identical. For our Pale Ale "Klarsteins Classy" you need - drum roll - malt, hops and yeast. Yes, our craft beer already has the classic approach in its name. ​​

Brewing "Klarsteins Classy" craft beer yourself

"Klarsteins Classy" is a fantastic introduction for all hobby brewers who want to brew their first craft beer themselves. Our version is a typical US-American Pale Ale: "grapefruity", tart and delicious. With the recipe you get about 30 litres of beer with 13% original spiciness and about 5% alcohol by volume.​

MASHING:​

In the first step you have to mash the ground malt with 23 litres of water. This is the so-called main brew, which you heat up to 60 degrees. The first rest lasts 10 minutes and is at 57 degrees - resting describes the times during the mashing process when the temperature is constant. The second rest occurs at 63 degrees and lasts 35 minutes. After the main brew, you heat it up further for a third rest at 73 degrees for 20 minutes During the last heating and before mashing, the temperature should reach 78 degrees. ​

AFTER POUR: 15 litres

COOKING AND HOPS:

The boiling time of our "Klarteins Classy" is 90 minutes. At the start, you add 36 grams of Cascade to the front wort and allow it to boil. After 20 minutes you add 6 grams of Admiral and after another 60 minutes you add 36 grams of Cascade as well. Let the mixture boil for another 10 minutes before moving on to the next step. ​

FERMENTATION: ​

Soon you'll be able to proudly announce to your friends that you've brewed a craft beer yourself. But before you do, let the brew cool down to 20 degrees. Then you add the yeast and wait until the beer is fully fermented. To finish, you fill it with a sugar solution.​
