How does an induction hob work?

An induction hob has the same function as the traditional hob, but unlike the latter, it does not need gas to work and is powered by electricity. The mechanism is simple: when you turn on your induction hob, energy is transmitted to a coil covered by a material, usually glass-ceramic. Therefore, the secret of induction is in the coils that, when powered by electricity, generate a magnetic field that is transferred directly to the cookware, heating them. For this purpose, the pots or pans that you use must necessarily have a flat bottom and contain ferrous material.

Until recently, the choice of an induction hob was still minimal, due to a prejudice about its consumption, which was considered very high. More recently, more and more consumers are opting for induction hobs, because of the apparent advantages related to their use, which we list in the following paragraph.

Induction hobs and power consumption

The energy consumption of an induction hob is broadly similar to that of an electric hob, although there is less heat loss than an electric hob. In an induction hob, the transfer of electricity to the pan is 84%, compared to 74% for an electric hob and even 40% more efficient than a gas hob, where there is more heat loss than in both types of cooking. While energy consumption is lower, a gas cooker has the advantage that natural gas is cheaper than electricity. Therefore, a kitchen with an induction hob has a higher bill at the end of the month. A consumer who wants a kitchen with an induction hob will have to increase the meter’s capacity to 4.5 kW compared to a standard contract of 3.3kW, thus increasing the bill’s price. The more you consume, the higher the price per kW.

So how can an electric induction hob consume less energy than a traditional gas cooker? This is because induction cooking produces energy that transfers for 90% on heating the metal pan and the heat is not dispersed throughout the hob. Consequently, cooking times are also shorter.

So, in the end, can you save energy with an induction hob? The answer to this question depends on how you use it. A single induction hob can draw up to 3,600 W when t is switched on, but with moderate use, it only consumes 600 W during use by dividing the heat between the pans placed on it. In addition to the costs of use, it is necessary to consider pots purchase with magnetic bottom compatible with induction hobs.
